I'm revising the handover with controls. Which recovery situations would you put ahead of another demonstration of a perfect tray?

Start with the calls you actually receive, including that empty pocket, and agree the permitted response and escalation for each before teaching it; I would also include an interruption where nobody can confirm whether the housing was placed, because another cheerful startup demonstration won't help with that.
